Chocolate Mint Cookies for a Happy Holiday

We want to thank all of our guests who have stayed with us throughout the years at the Woolverton Inn and wish everyone a wonderful Holiday Season and Happy New Year.

During the month of December, New Hope PA, Lambertville, NJ and Peddler’s Village offer a lot of holiday magic and it is a perfect time to visit the area.  A little snow on the ground offers a great backdrop.

We have a great new cookie for the winter months and it’s easy to prepare!

 

Winter Mint Chocolate Cookies

2 Cups all purpose flour

2/3 cup cocoa powder

1 teaspoon baking soda

½ teaspoon salt

2 sticks softened butter

2/3  cups sugar

2/3 cups packed brown sugar

1 teaspoons vanilla

2 eggs

 

1 2/3  cups chocolate and winter mint chips

 

Preheat oven to 325˚F.  Combine flour, cocoa, salt, and baking soda in a medium bowl and set aside.  In a mixer, beat together the butter and sugars and vanilla, mix until creamy.  Add the eggs one at a time beating well after each egg.  Slowly incorporate dry mixture into the wet mixture and stir.  Finally, add the chocolate chips. 

Roll into tablespoon sized balls and set on a cookie sheet lined with parchment paper.  Bake for 11-13 minutes; the cookies will be soft.   Cool for 2 minutes on sheets.. 

 

You can vary this recipe by adding different flavored chips or nuts to the batter (white chocolate chips look great!)
